Kitchenista: Who Can Resist Chicken on a Stick?

chicken satayThe other day we went on a buying spree in a Penzey's spice store (have you heard of this place? they do a huge mail-order business and I've been buying my spices from them for years and was SO EXCITED when they opened up a bricks-and-mortar store only 45 minutes away) and Mr. I'm Eleven and Therefore an Expert on Many Things snagged some recipe cards to take home for things that sounded good.

That night we made Chicken Satay. Have you had this?  Marinated asian chicken. On a stick. Mmm. There are tons of recipes for this on the net, but here's what we did:


1 tb soy or shoyu

1 tb rice wine vinegar

2 tb sesame oil 

2 tb water 

1 tb chunky peanut butter 

2 tb Penzey's Sate Seasoning*

 

Mix well. Cut 1 lb chicken into cubes and marinate 2 hours. Meanwhile, soak skewers. Thread chicken onto skewers (5-6 pieces each) and grill (we used the broiler and skipped the skewers and it was still good). Recipe should actually be doubled unless you want fights to break out at the table. You can play with the proportions in the recipe, too. Here's another easy recipe variation from Cooks.com. Here's another with a recipe for a dipping sauce. Mmm.

Oh, and next time we make this, Mr. Expert is going to do it by himself, it's that easy. 

 

 

*Yes, this is cheating, but you can substitute a mixture of 1 tb brown sugar, 1 tsp salt, 1/2 tsp garlic powder, 1/2 tsp onion powder, and 1/2 tsp curry powder.
