I love cooking, and while I may appear to be pretty good about planning meals ahead of time, what I’ve actually gotten skilled at is keeping my pantry and refrigerator well-stocked with foods that will last us for weeks, even months. So, whenever I think I don’t have anything to cook, I in fact have plenty of amazing — and easy — choices right at my fingertips. Most of the recipes below include ingredients that I try to always have in my pantry or freezer so that I can make them quickly and easily without a long trip to the store. After all that holiday cooking, and the impending celebrations of the New Year, isn’t quick and easy what we all need for these next few days?!

Here are 10 easy weekend recipes for you to choose from to help get dinner on the table in no time! Keep this list on hand for any of those times that you’re stuck in a rut or you feel like you have zero time to be in the kitchen. Now, relax and rejuvenate this weekend!

  • Shredded BBQ Chicken Sandwiches 1 of 10

    This Chicken Pesto Pasta is one of those meals that's seriously fast. It's even faster if you buy rotisserie chicken from the supermarket, but I love to use whatever I have on hand. If you've got chicken in the freezer, or leftover from two days ago, throw it in the pot!

  • Chicken Parmesan French Bread 10 of 10

    Chicken Parmesan is one of those classic dishes that I crave often. I love Bev's twist on this family favorite. Chicken Parmesan Toast is exactly what it sounds like. Chicken pounded thin, covered with sauce and cheese, and layered on top of toasted french bread. Yum!
