11 Healthy Lunch Ideas for the Office!

Next time you have a dinner everyone really enjoys, why not think about how you can reinvent it the next day for a tasty lunch? You can give it a new spin and chances are your crew will love it just as much. Figuring out ways to simply and creatively turn last night’s dinner into today’s lunch is one of my passions. Here I have 11 recipes to help give you some healthy lunch ideas for the office, or your child’s school lunch! What is your favorite dinner to repurpose as lunch the next day?

  • Tandoori Chicken 1 of 11

    Tandoori is a delectable, Indian dish in which the chicken is marinated in yogurt and assorted spices. It's a tempting choice for dinner, how about serving it for lunch the next day? I thinly sliced my leftover Tandoori Chicken on a crusty ciabatta roll with a simple lemon mayo spread for Kenya's lunch, but you could just as easily chop up the chicken and place it on top of cooked brown rice, cut it into cubes for dipping into a side of the citrus-y mayo or even place it on salad.

    When I made this Bright Vegetable Pasta for my kids, what worked so well for them is that the vegetables are grated and chopped into such tiny pieces that everything in the dish is really easy to chew, especially for small mouths. Plus, in every bite they got a burst of sweet veggies brightened by a squeeze of lemon juice and a sprinkle of grated parmesan cheese. Combined all together it's a really simple dish that even the most resistant vegetables eaters should be willing to try.

    This is my version of a restaurant favorite Lentil Walnut Dip, which I tweaked a bit so it would work using ingredients you likely have in your kitchen already. I admit that it's not the most pleasing dish to the eye, but after just one bite of this creamy spread you won't be concerned about looks. Packed with tons of umami flavor from the miso and a rich nutty finish, this is one of those protein-packed dips you'll want to keep stocked in your fridge all the time…especially in case my husband ever knocks on your door.
