We’re smack in the middle of summer and I am in deep. We’ve headed to the beach as much as we could but haven’t been able to take that family vacation to a resort somewhere and I’ve never been to Hawaii…or pretty much out of the US. My brain is full on tropical island dreaming. While I can’t magically bump up my bank account and head to the tropical islands of my dreams, I can find away to bring the islands to me via the fruit of the tropics…Coconut!
