Maybe it’s because of back-to-school, but lately, I’ve been getting a lot of SOS messages from moms asking for fast but filling breakfast ideas. I’m not suggesting that pancakes and waffles are really going to make it onto your table in 60 seconds, but where there’s a will there’s a way. If the thought of making something from scratch at 7am is unappealing to you, how about mixing the wet and dry ingredients separately the night before? Then, all you have to do in the morning is mix them together in a bowl and scoop some batter into the waffle iron or the griddle. Simple. But if that’s still too much for you when you’re feeling bleary eyed, exhausted and just want to get everyone out the door well-fed, follow in my foot steps. I like to make a huge batch of pancakes or waffles on the weekend and store them in labeled freezer bags so all cooking breakfast entails for me is warming some in the toaster oven and serving with fresh fruit or syrup. It’s easier than putting out cereal and by the time everyone’s at the table you’ll look like you made them the perfect breakfast from scratch and give your little ones a life-long feeling that Mom always cared about giving them the best — even at the crack of dawn! It took me a bit of trail and error, but I'm finally over the moon -- I mean really over the moon -- with this recipe. It actually may be one of my favorite weelicious recipes because of how versatile it is: I used the mix to make waffles this morning and the kids actually said they were the best I'd ever made! This Whole Wheat Pancakes and Waffles Mix recipe makes a bit more mix than what you would normally find in a box of the pre-made stuff, but that's a plus, especially if you have a house full of pancake lovers. Just keep the mix in a sealed container and anytime you want to make these, just add an egg, milk, a touch of oil and a scoop of mix for whole wheat pancakes or waffles that are sure to please!

One recent Saturday morning, Daddy decided to make a beet pancake recipe he had seen in a cookbook. As soon as Kenya heard the words "beet" and "pancakes" he said, "no way, that's gross". It didn't take long for Chloe to jump on the "yucky" bandwagon. It seemed like this experiment was going to leave two out of four of us with empty tummies, but as soon as the kids got into helping Daddy stir, mash and measure, they apparently forgot all about their initial aversion. By the time the beautiful ruby Red Beet Pancakes finally came off of the griddle and onto everyone's plates, the kids downed about 5 a piece. My favorite part of this story though, came later on when my husband asked Kenya why he was so resistant at first to the beet pancakes. Kenya just looked at him and said, completely matter of fact, "who knew they were going to be that good!"

I probably took it for granted when I was little, but I have to give my mother some credit for always having a delicious breakfast on the table for us in the morning. Yes, there were simple meals of cereal and fruit, but there were also plenty of days where Mom would be in the kitchen making homemade muffins, perfect pancakes, divine french toast and other first-meal-of-the-day favorites. Now that I'm a mom, those yummy childhood memories inspire me to do the same for my family.
