I live in a home full of picky eaters. More often than not my husband is content to eat a meat and potatoes plate which make my daughter more than happy cause she is fiercely anti-veggie. But I have discovered that they aren’t necessarily anti-carrot. Carrots are full of nutrition. They are an excellent source of vitamin A, providing more than 200% of your daily requirement in just one carrot. Carrots also are loaded with beta-carotene, a compound that is naturally converted to vitamin A when consumed [source] and also have a light, sweet flavor that both kids and adults love. The problem is finding creative ways to add it into our meals. In California, carrots are harvested mainly in the spring and fall and since most of the kids went back to school here already, it gave me a reason to seek out some amazing carrot recipes to try at home.
