Apple-and-Havarti-Stuffed Chicken Breasts

I am super excited to share my first recipe with Babble! I chose this chicken stuffed with sweet apples that will fit your family’s healthy lifestyle and takes only 40 minutes to make. Make it and please share with me what you think. I want to hear from you!

Apple-and-Havarti-Stuffed Chicken Breasts

Makes 4 servings
Prep: 10 minutes, Bake: 20 minutes, Cook: 10 minutes

Ingredients

4 boneless skinless chicken breasts (about 2 pounds)
1⁄2 teaspoon salt
1⁄4 teaspoon ground black pepper
12 very thin peeled apple slices*
1⁄4 cup shredded Havarti or Cheddar cheese
1 tablespoon canola oil
1⁄2 cup apple cider
Garnish: fresh thyme

Method

  1. Preheat oven to 350°. Using a knife, cut a slit about 2 inches long in thick side of each chicken breast to form a pocket (do not cut in half). Sprinkle inside of pockets and outside of chicken with salt and pepper. Stuff each with 3 apple slices and 1 tablespoon cheese. Pinch edges to seal; secure with 1 or 2 wooden picks.
  2. In a large ovenproof skillet, heat oil over medium-high heat. Add chicken; cook for 2 minutes on each side, or until lightly browned. Bake for 17 to 20 minutes, or until done, turning once. Remove chicken from skillet; place on a serving platter. Discard wooden picks.
  3. In a small saucepan, pour pan drippings through a fine wire-mesh strainer; discard solids. Stir in cider, and bring to a boil over medium-high heat. Cook, stirring often, for 2 minutes, or until mixture is reduced to 1⁄3 cup. Serve apple cider mixture with chicken. Serve with mashed sweet potatoes and steamed broccoli. Garnish with fresh thyme, if desired.
