I’m catering an Easter brunch this year and was trying to think of a menu that would satisfy some friends from out of town and a lot of kids too… and I was having some trouble trying to think of things that everyone would like. If you don’t know this about me already… I sometimes suffer from recipe amnesia and more broadly I forget the things I make and love to eat…durrrr…

I’ve prepared this recipe on my show and it was a back to school lunch idea… Frittata 2 ways! It’s such a great recipe (not just cause I made it) and it really is so easy you’ll laugh… I make myself laugh! You basically take the all the ingredients, in this case lots of beaten eggs, peas, cheese, and ham and add everything to a saute pan and pop it in the oven. AND… you can also make little muffin frittatas by lining a muffin tin with sliced ham and pouring the same ingredients into it.

I’m sure you guys could make a million different variations of this recipe so go ahead and have fun with it…use this recipe as your guide. Your Kids will love to help out in the kitchen too… Just like coloring Easter eggs but actually getting to eat them afterward!
