Halloween time is upon us, and if you’re anything like me you’re likely already rooting around in the bags of candy you bought for trick-or-treaters, indulging in dubious and clandestine candy consumption. But why suffer the pre-packaged, artificially-colored high-fructose kid’s stuff, when in just a few minutes you could have some delicious, chocolate-marshmallow-caramel homemade awesome? WHY, I ASK YOU?
I’m here to help, parents. Here’s a tasty way to numb that Halloween sweet tooth with real, stovetop-fresh candy goodness.
Werther’s Rocky Road Bark
16 oz – 60% Cacao Chocolate (or similar high quality)
1 handful – Mini Marshmallows
1 handful – Chopped Pecans
1 handful – Chopped Werther’s Caramels
Melt the chocolate in a double boiler (or in quick 30 second pulses in the microwave, stirring in between each pulse). Let the chocolate cool slightly, being careful not to let it set.
Once cooled add the chopped nuts, Werther’s caramel, and mini mallows to the chocolate. Stir.
Pour mixture onto a half sheet pan lined with wax paper, and spread into a thick-but-even(ish) layer. Chill for at least 30 minutes.
Break/cut slab into pieces with a sharp knife or other handy kitchen implement.
And there you have it – Werther’s Rocky Road Bark, all up in here! Miles away from kid’s candy… in the direction of pure unadulterated FANTASTIC.
