I may or may not have mentioned this before, but my boyfriend Charlie is a baker. This explains, among other things, my exponentially expanding backside and, relatedly, the lo-carb diet I’ve had to consign myself to recently. But that’s beside the point, really.
The point being that when I mentioned to him that I was doing this post series about The Lorax Movie, he – the man whose Lorax affection knows few, if any, appropriate bounds – decided he was going to take it upon himself to translate The Lorax into baked goods if it was the last thing he did.
And so he did. LIKE A BOSS.
Ladies and gentlemen, I’m pleased to present you with a little how-to for the fruit of my baker boyfriend’s labors: Charlie’s The Lorax Truffula Tree Cupcakes:

Step 1: Make Cupcakes 1 of 6We used the boxed confetti kind. Why? Because let's face it, confetti cupcakes are awesome, that's why! Just follow the directions provided on the box.
Step 2: Make Italian Meringue Cookies 2 of 6- Preheat Oven to 200 F
- Measure 2.75 ounces of egg whites & 2 1/4 cups of confectioners sugar
Whip eggwhites until soft peaks form. Slowly add sugar. Mix.
Step 2, Continued 3 of 6Add the color of your choice, and mix until firm and shiny.
Pipe meringue mixture into "treetops" (I used a #829 star tip) and bake for 3 hours.
Use a wooden spoon to keep the oven door slightly ajar for proper air circulation.
Step 3: Add Icing 4 of 6Mix plain white icing (store bought is fine) with green dye. Pipe green icing on the cupcakes. Try using various piping techniques (as we did here) to make all the cupcakes look different (Have fun! Play! Get SWIRLY!).
Step 4: Decorate! 5 of 6Insert appropriate length of Pepperidge Farm Pirouette cookie (for the trunk) and top with cooled meringue cookie.
Voila! Truffula Trees!
Step 5: ENJOY! 6 of 6These adorable (and delicious!) cupcake treats are sure to be a hit with Lorax-loving kids and adults alike! HUZZAH!
And to answer your question, yes, they taste as good as they look. Mmm… forbidden carbs. *le sigh*
