Snickerdoodles for School

It’s the holidays ’round these here parts*, otherwise known as “Send Cookies to School for Holiday Parties” season. (*aka-everywhere.)
Wednesday is Polar Express Day at school where they need…cookies.
Thursday is Good Behavior Day at school where they need….cookies.
Friday is Holiday Party Day at school where they need….WAIT FOR IT…cookies. (I bet you already guessed that, didn’t you?)

efrigerated cookie dough and cookie mixes. To whomever invented this: THANK YOU OH WISE ONE. I bow to you and your incredibly smart ideas. I’ll be indebted to you for all of my children’s elementary school years.
My personal favorite cookies to eat, but more importantly my personal cookies to make a KAZILLION OF, are those that are simple. I don’t need fancy icing, designs, or chocolate chips. What I need is Snickerdoodles, yummy cake-like, sugar cookie-like, cookies dipped in a cinnamon-sugar mixture.
As much as I’d like to claim Snickerdoodles for my own family recipe, Pillsbury makes a delicious and easy mix, perfect for when you’re on a cookie deadline. I made my Snickerdoodles using my stand mixer fitted with a dough hook, which made the already incredibly simple to make cookies even more incredibly simple. Ella agreed to help form the cookie dough balls and roll them in the cinnamon and sugar mixture that came in the Snickerdoodle mix. Look for this girl on an upcoming episode of Food Network Star.
The box said it made 3 dozen and when I read 3 dozen it seemed like A LOT OF COOKIES. Certainly it would be A LOT OF COOKIES if I was able to keep grubby, little fingers away from them because somehow 3 dozen became 1 dozen rather quickly.
I’ll be back at the grocery store tomorrow to buy another Snickerdoodle mix. Well, another two or three mixes. It’s a long time until Wednesday.
Snickerdoodles are my most favorite cookie ever. I will have to try this mix!
