My mother used to sing me that lime in the coconut song when I was a little girl, and I thought it was some diddy she’d made up because she was absolutely crazy. I was half-way correct.
The guy who did write that song was probably a little cookoo, too, but there is a fine line between crazy and genius and it looks a little something like this.
That is what happens when you have unexpected houseguests on a gorgeous spring afternoon in South Texas when your fridge is breaking so you have all the contents of your fridge in your freezer for safekeeping. That is a coconut limeade shaken over frozen blueberries and pineapples. That is a little slice of heaven.
And here’s how you make it.
Pour one part Malibu rum and one part limeade and jeeeeuuust a splash of pineapple juice into a shaker with 1/2 ice and 1/2 fresh-frozen pineapples and blueberries. Shake it all up enough to mix it, but not enough to melt it, and then pour favorite back-porch-in-the-sun-in-your-bare-feet-with-your-best-friend glass.
Add a bunch of giggling children and some cute puppies playing in the sun and a husband willing to cook your silly
drunk butts dinner you have, like, the best day ever.
Alternate ending: The fruit is awesome if you eat it after, but it’s even more awesome if you muddle it in the bottom of the glass, then make another one on top of it. Totally new drink, but totally delish in its own right.
