Quick and easy appetizers have saved a long standing tradition in our home; sitting down together each night for dinner. With a schedule like we have, it can be a challenge to all be home at the same time each evening, but because we’ve committed to it, we’ve had to come up with creative ways to ward off hunger while we wait for everyone to get home for dinner. My kids used to reach for granola bars or chips but we wanted some options that we’re lighter and more healthy.
Enter our arsenal of quick and easy family appetizers of which these Veggie Confetti Crackers are our favorite! Super simple, fresh and delish, these little bite sized beauties take the edge off when we’re waiting for soccer practice to end or rehearsals to let out.
We’ve used them for entertaining too and everyone loves them. Try them for yourself! Here’s the recipe. Get your kids involved with this one. My girls love helping with such a simple recipe. It’s as easy as 1-2-3.
A Simple Recipe 1 of 8
Veggie round up 2 of 8
I use a mixture of red, orange and yellow bell peppers, cucumber and green onions.
Chop chop 3 of 8
Chop all the veggies into small pieces and combine in a shallow bowl.
The other ingredients 4 of 8
You'll need whipped cream cheese and crackers. I usually use any of the new flavored Triscuts. This is Cracked Pepper & Olive Oil flavor.

Spread a generous amount of whipped cream cheese on a cracker.
The dip 6 of 8
Dip the cream cheese side of the cracker into the veggies and push down gently. The object is to pick up the veggies with the cream cheese.

Lift cracker and the work is done! You should have a perfect variety of the veggies on each cracker. You can cut up the veggies ahead of time and have them ready in the fridge so that appetizer/snack only takes a moment to prepare . I don't suggest prepping your whole cracker ahead of time. Crackers get stale quickly when stored like this.

Now you know why we call these Confetti Crackers. Not only is this snack vibrant in color, it's huge on taste! You can make a large batch or just enough for one person which makes it that much more convenient. Yum!
