I’ve got two picky eaters in my family, and then two kids who love spice and flavor. It’s not easy finding meals that they can all appreciate, and one that has quickly become a staple for us is taco salad.
We do taco salad buffet-style, where each child can create their own taco bowl. It’s simple, it’s easy, and it’s healthy since we use ground turkey and plenty of lettuce. We usually have the following items available:
- ground turkey seasoned with Old El Paso taco seasoning
- chopped lettuce
- shredded cheese
- plain yogurt
- Old El Paso mild taco sauce
- tortilla chips
We let the kids serve themselves. Easy peasy.
This is one of India’s most adventurous meals, because her food is touching. And she eats lettuce. I cannot express what a big deal this is.
It’s nice when every member of the family is excited about the same meal. We’re trying hard to get back into the family dinner habit after a summer full of travel. One of our mealtime traditions is reading some Table Topic questions to get the kids chatting.
Only Jafta choose to be a scientist. I guess we need to work on empathy?
