Cold winter nights scream for hearty, satisfying meals, don’t they? Well, if you haven’t met before, let me introduce you to my best friend — the slow cooker.
I am obsessed with my slow cooker (or crock pot, as some like to call it), and I have an arsenal of delicious dinners in my repertoire. Lately, I’ve been using my Surface tablet in the kitchen while preparing our hearty meals, and it’s made dinner preparation a breeze.
Here’s one of my very favorite cold weather dishes, Creamy Potato Soup:
6 slices bacon; cut into ½ inch pieces
1 tbsp. butter
1 onion, finely chopped
32 oz. chicken broth
1 cup water
6 large potatoes, diced
1 tsp. salt
1 tsp. dried dill weed
1 clove of garlic
1 tsp. pepper
1 cup all purpose flour
2 cups heavy cream
shredded cheese and green onions for garnish
1. Sauté onion in butter over medium-high heat until soft.
2. Place onion in slow cooker, and stir in chicken broth, water, potatoes, salt, dill weed, garlic, and pepper. Cover and cook on low 6 to 7 hours.
3. 30 minutes before serving, combine flour and heavy cream. Stir into soup.
4. Cook the bacon separately, drain on paper towel, then add as topping along with cheese and green onion.
