There’s really no recipe to this Thanksgiving sweet potato hash. It’s all about assembly, and by assembly I really mean throw your Thanksgiving day leftovers into a sauté pan and reheat them. Since everything is already cooked and leftovers just taste better the next day, the flavors have had a chance to really reach their full mouthwateringly-awesome-potential, right?!
Here’s what I do… grab leftovers, maybe some roasted sweet potatoes, maybe you want to add some turkey, heat that up, then add an egg. YEP. Just crack it open and let it sizzle. A glorious fried egg melds all the flavors together and can be a wonderful breakfast, brunch, snack, dinner, or a “just-because-I-need-a-meal-now”… this one will be a favorite.
