What’s Fresh? Shepherd’s Pie with Creamy Parsnips…THAT’S FRESH!

It’s spring, its St. Paddy’s day, it’s… I’m just hungry! I drive myself crazy sometimes with creating recipes.  I think about how to make them easy to follow, how to change it up a bit so that its still interesting and delicious and matches the time of season… so this recipe is one that I feel matches perfectly to this criteria… SHEPHERD’S PIE w/ PARSNIPS. It’s creamy, it’s light, it’s got a touch of sweet from the parsnips, it’s comforting and it can feed a crowd. Plus they’re really darn cute served up in individual ramekins. I recently made this recipe on my show THAT’S FRESH and while I was writing out the recipe I didn’t realize I’d have a bit of trouble saying “parsnips” a few times… “parsnips, parsnips, parsnips” it gets jumbled together in my mouth somehow, so don’t judge me on that, judge this recipe on it’s awesomeness!
