One of the hardest things about making ice cream is the eggs. They can curdle or, worse, separate, and then all your effort is ruined. This is why I tend to make ice cream that is egg-free. I vastly prefer the ease with which it can be made and I love how it is virtually fool-proof. In fact, even if you don’t have any experience you can very easily make ice cream. Promise!
