Pretty much every summer I am drawn to the zucchini basket at my grocery store or farmer’s market. It’s one of my favorite vegetables (year-round) but even more so in the summer when I know that they are in season. What’s so great about zucchini is that there are a bazillion ways to cook with zucchini…from savory roasted or grilled dishes to sweet baked goods that pair zucchini up with nuts, chocolate or even cranberries.
