If there is one thing that always goes over with my family and most children I know, it is tomato sauce. My daughter adores spaghetti and meatballs, of course, but if I say we are going to have tomato sauce with chicken, or tomato sauce over polenta she is totally fine with it because there is tomato sauce involved! I usually rely on my simple tomato sauce recipe when I need tomato sauce for something like eggplant Parmesan or lasagna. It is so easy and healthy to make and we all adore it. However, I am not opposed to picking up the occasional jar of organic tomato sauce from Whole Foods or Trader Joe’s in a pinch. I find their store brands to be very affordable and comprised of only basic ingredients with a very low sugar content. Here are some of our favorite tomato sauce dinners that always hit the spot!

Eggplant Parmesan Pasta

This fantastic pasta dish is the best of both worlds - the sauce is mixed with roasted eggplant and tossed with pasta to taste exactly like delicious, classic eggplant parmesan!
