In this week’s veggie box was a bunch of collard greens. Of course the first thing anyone wants to do with collard greens is slather them in bacon along with the bacon grease. Now I’m craving that, and steamed collards are not going to do, but I’m still working on the slim down. So I’m going to substitute turkey bacon for the real deal to give it that flavor and skip the fat. Yay! Get the recipe along with 10 other slim-down sides after the jump …
Collard Greens Recipe, adapted from Cooking Light, to make it even lighter!
1 bunch of collard greens, leaves cut from stems and washed
1 1/2 cups water
1 1/2 cups reduced sodium chicken broth
1/3 onion, chopped
1 garlic clove, minced
5 pieces of turkey bacon
pinch of cayenne pepper
sea salt and pepper, to taste
In a pot bring to a boil the water, broth, onion, garlic, cayenne, and salt and pepper. Roughly chop the collard greens. When liquid boils add the greens, return to a boil and cook until soft, about 25-30 minutes. Meanwhile microwave the turkey bacon and chop. When the greens are done, add the bacon and cook for another 2 minutes. Serves a family with leftovers, possibly.
