Pot pies are one of those American favorites I think almost everyone loves. When I was younger and wasn’t yet the best cook, one of my favorite treats was a Marie Callender’s chicken pot pie from the frozen food aisle. I loved them so much, pot pies ended up being one of the first dishes I learned to make from scratch. Over the years I have learned just how versatile they are. You can make them with chicken, beef, and even with lots of veggies or lentils for a vegetarian version. My favorite way to make them though is in my cast-iron skillet, with biscuits or a pre-made pie crust added to the top before baking. They are always a hit with the whole family.
