The only challenge with loving shamrock shakes is that they are very rich and heavy. The other day I decided to make these sweet frozen bites which are essentially the same things as a shamrock shake, only much lighter. They only take three ingredients to make and come together in a matter of minutes. Now, I honestly can’t think of any better way to enjoy a lightened up shamrock shake!
Shamrock Shake Frozen Yogurt Bites
1 cup vanilla yogurt
1 cup fat-free frozen whipped topping
1 drop peppermint extract
Green food paste
Nilla wafers for garnish
Stir together the vanilla yogurt, whipped topping, peppermint extract, and a drop of green food paste. Scoop into mini-muffin cups and top with a cookie. Place them in a mini-muffin tin and freeze. Once they are frozen, enjoy!
