I recently had to make a gluten-free treat for a friend and the recipe called for quinoa flour. Admittedly, I was unsure about baking with it since I never had before. But, I gave it a go and it turned out beautifully! It turns out that quinoa flour yields a wonderfully moist and delicious baked good. It is light and fluffy and ideal for anyone eating a gluten-free diet. It is also great when combined with regular flour because it lightens the baked good and adds a little whole grain goodness.
