We love to enjoy fresh corn on the cob in the summer. It’s so sweet and delicious. Although we usually just eat corn on the cob with butter, I’ve been looking for some more recipes to change it up a bit. Last week I tried this oven roasted corn on the cob with basil lime butter. It was so good and tasted really fresh. The next time we have corn on the cob, I want to try Kathy’s recipe shown in the photo above, elote, a Mexican corn on the cob.
I have also compiled a list here of some of my favorite recipes from around the web for fresh corn. These recipes showcase the sweet wonderfulness of corn, both on the cob and served in salads. Any of these recipes would make the perfect side dish for any summer supper, BBQ or get-together.
