15 Minute Chocolate Ganache Mini Cupcakes

Have a Valentine’s party to go to? Need some chocolate treats ready in a flash? This mini chocolate cupcake recipe will provide you with dozens of chocolatey jewels in just under fifteen minutes. Frost them with 99 Fudge Sauce, and in less than a half an hour you’ll look like a supermom (or superdad, whichever).

I got my inspiration for this recipe from Abigail Johnson Dodges “Emergency Blender Cupcakes” in The Weekend Baker cookbook. You can make mine in a blender, or a food processor—just dump all the ingredients in, blend them up, and you’re good to go.

15 Minute Chocolate Ganache Cupcakes

1 cup all purpose flour
1 cup sugar
1/4 cup dark cocoa powder (Dutch processed, such as Hershey’s Special Dark), or 1/3 cup regular cocoa powder
1/2 cup buttermilk (or 1/2 cup milk + 3-4 drops vinegar)
1/2 cup oil
1 1/2 teaspoons pure vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup very hot water

1. Preheat oven to 350 degrees. Line 2 mini muffin pans with 36 mini muffin liners. Place all ingredients in a blender or food processor, and blend until ingredients are well incorporated. Fill papers halfway, and bake for 5-7 minutes, or until the center cupcakes bounce back when touched.

2. Let cool in the pan for 5 minutes, then remove to a wire rack. Frost with 99 second fudge sauce.
