As much as I try to fight prepackaged foods, I’m here and now admitting a weakness for a box of Jiffy baking mix. Jiffy Pumpkin Bread
2 cups “JIFFY” Baking Mix
1/3 cup oil
1 cup sugar
1-1/2 tsp. cinnamon
1 tsp. nutmeg
1 cup pumpkin puree
Preheat oven to 350°. Grease and flour one 9″x5″x3″ loaf pan. Combine oil, sugar, cinnamon and nutmeg. Add eggs, pumpkin and baking mix. Blend well. Pour into prepared pan. Bake 55 minutes or until toothpick inserted in center comes out clean. Remove from pan immediately. Cool on rack before slicing.
