15 Ways to Cook a Cauliflower

How many times have you bought a head of cauliflower–all ready to chop it up and enjoy the healthy benefits of this veggie–then left it forgotten in the fridge? Uninspired, it goes unused until you toss it in the garbage. I’m afraid I do this too often at my house. I so want to love cauliflower. It’s got all sorts of nutritional benefits and we don’t necessarily hate it at our house. But, we don’t really love it either. Steamed, it’s kinda meh. Roasted, it’s a little less meh. And once you’ve steamed or roasted, then what’s left?

Actually, there are lots of things to do with a head of cauliflower! It stands in beautifully for meat in vegan recipes, grills up gorgeously, and even makes a mean au gratin. Looking for a way to use up that cauliflower in your fridge? These fifteen recipes will inspire you to think outside of the box and make some seriously fork-friendly eats fast!
