I know colorful bell peppers are technically a summer vegetable, but since they are available year round in most groceries stores, I can’t help but enjoy them in winter too. And in cooler months, there’s nothing I love better than to stuff them, especially around the holidays. Something is just so magical about making brightly colored bell peppers on a dreary cold day. They bring a bit of sunshine and festive color in your life. Over the years I’ve tried stuffing peppers a number of ways, with different grains usually paired with a ground meat and chopped veggies and herbs. I’ve even done a few vegetarian ones.
