Everyone has got to have a go-to recipe for crazy quick dinner eats. These simple Black Bean tostadas are our families perfect quick dinner. They take two minutes to assemble, and about 5 minutes to cook. Of course, if you’re in a real hurry, you can just toss the tostadas in the microwave for 20 seconds and be done with it all as quick as you can say “aye chihuahua.”

8 tostada shells
2 cups shredded cheddar
1 can black beans, drained
1 cup frozen white corn
1/4 cup green onions
1/4 cup cilantro
1/2 cup grape tomatoes, halved
Turn oven to 500 degrees. Place tostadas on a baking sheet. Sprinkle with cheese, black beans, and corn. Toss into your preheating oven. No worries if it hasn’t fully heated up yet!
On a wooden cutting board, use a sharp knife to chop the green onion and cilantro. Slice tomatoes in half.
As soon as your cheese has begun to melt, remove the tostadas from the oven, top with green onions, cilantro, and tomatoes. Enjoy!
