2-Minute Snacks for Happy Kids and Sane Moms!

Between breakfast, lunch and dinner, parents have a lot of food to prepare for their families everyday. I will be the first to admit that it sometimes feels a bit overwhelming. So, when my kids inevitably tell me they are hungry mid-morning and mid-afternoon, I groan to myself. They want more food? Really!?!?

Yes. Yes they do. They’re growing! They’re hungry! ALL the time! So I can grumble all I want, but my kids still need a snack. So I suck it up and throw something together, and the faster the prep time for snacks, the happier I am!

These 2-minute snacks will please your kids’ taste buds and keep you sane just what I need!

  • Bean and Cheese Burrito 2 of 8

    My 5-year-old loves bean and cheese burritos and I love giving them to her! The beans are super healthy, and it easily takes me less than 2 minutes to prepare.

     

    I always have a package of flour tortillas, a container of refried beans and a bag of shredded cheese in the refrigerator.

     

    Spread a spoonful of refried beans down the center of one tortilla. Heat in microwave for about 15 seconds. Sprinkle with shredded cheese and fold like a burrito. 

     

    I think that might even be a 1-minute snack!

    One of my favorite "salads" as a kid was ambrosia salad. My kids are no different! And these individually-sized ambrosia salads are perfectly portioned and easy to prep!

     

    Drain off the juice from a 4-ounce snack cup of Del Monte diced mango and pineapple. Mix fruit with 1/4 cup whipped cream. Sprinkle with shredded coconut. That's it, you're done!

     This sweet dip is wonderful for all kinds of fruit and is super quick to throw together!

    My kids would eat crackers all day every day, so I try to pair them with a nutritious ingredient to take advantage of their obsession.

     

    This "recipe" is simple: spread a dollop of peanut butter on a round, butter cracker and top with another cracker. Definitely less than two minutes for that prep time! And my kids love it!

    If you tell a kid a vegetable is a caterpillar, they are 85 percent more likely to eat it. Okay, I'm not entirely sure that stat is accurate, but I do know my kids are more likely to eat food when it's presented in a fun way! And these cheesy zucchini caterpillars are super quick to prepare.
