Classic buttery shortbread is one of my favorite Christmas cookies. It is perfect for dunking in cider or hot chocolate, or even your morning coffee! I also love how easy it is to make and amend. A basic batch of dough can be flavored dozens of different ways. Add some chocolate chips if you are in the mood for a little more sweetness. Or, add some dried cranberries or chopped nuts for some more adult flavors. No matter which way you do it, it always tastes great. Shortbread also travels so well.
