In honor of National Empanada Day (which is April 8th), I have put together this round-up. The truth is I wait for empanadas. I search them out. I savor them as if they are the world’s most precious treasure. I never turn them away, nor do I know anyone who isn’t as crazy for the dough stuffed small bites as I am. Some people prefer them filled with sweet fruit and others will opt for a savory ground meat filling, and then there are the people like me who will take them either way. Empanadas are the Spanish version of a turn-over or hand-pie. They are made by many Latin cultures with slight variations and fillings….
