25 Beet Recipes For Every Meal (and Dessert Too!)

There are two kinds of people in this world – those who hate beets and those who love them. Whether you love them or hate them, beets have amazing health benefits. I fall into the camp of not loving them so much, but I’m trying to. I can’t deny that their health benefits give me more than enough reason to try. They are loaded with their namesake betaine with can help fight inflammation and prevent heart disease. They are also high in folate and minerals, and help the liver with cleansing our bodies of toxins. (Read more about all of the health benefits of beets on The World’s Healthiest Foods.)

We normally think of beets as the deep crimson red that stains our hands and cutting boards as we prepare them. And while they are full of antioxidants, it’s that betaine I mentioned that is responsible for that gorgeous color. You can also find beets that are white, candy striped, and golden.

At our house I feel like I’m mostly boring when it comes to beet recipes. My husband loves them roasted, which enhances their natural sweetness. I don’t mind them raw in slaws, salads, or smoothies and fresh juices. But in my attempt to try new beet recipes I searched around and found some I’m dying to try.
