25 Dinners You Can Make in Under 10 Minutes!

Summer yields a bounty of produce that requires little or no cooking, making it the perfect time for fast, fresh family meals. That’s been especially great for us now that we have a four year-old and a newborn at Brooklyn Supper headquarters. Meals that can be made in under 10 minutes have gone from being a nice change of pace to a necessity. We know that you’re busy, too, so we thought we’d share some of the quick and easy summer meals that have been staples in our house this season.

A few years ago Mark Bittman wrote up 101 ideas for 10 minute dinners, and we’ve taken a page from his book and compiled our fast (and fresh) favorites.

    Saute a diced onion in plenty of olive oil, add 3 diced tomatoes. Season with salt, pepper and herbs of choice. Poach eggs in sauce, and serve with toast.

    Saute an onion and a few cloves of garlic. Throw in a handful of chopped tomatoes, herbs, and olives. Serve over your favorite pasta.

    In a small saute pan or toaster over, lightly brown several handfuls of pine nuts, toss with olive oil, a tablespoon of fresh lemon juice, and fresh herbs such as basil, parsley, or sage. Toss with pasta.

    Heat olive oil over medium heat, add a handful of toasted 1" breadcrumbs, crushed and minced garlic, salt, pepper, and herbs; cook for 5 minutes. Core and seed several tomatoes and stuff with the bread mixture. If you have time, bake the tomatoes in a toaster oven for a few minutes, otherwise, they'll be great as is.

    In a medium skillet, heat 2 tablespoons butter, and saute a diced onion and a 1/2 cup or more chopped vegetables, such as summer squash or zucchini. Whisk together 4 eggs and 1/4 cup heavy cream or milk. Add to the skillet, and cook just until the eggs are set. Slice and serve.
