Now that fall is in the air, I’ve been breaking out some of my favorite autumn recipes. For weeknight dinners, we like to change things up and add a healthy array of vegetarian dinner recipes to the mix. In a season brimming with fresh vegetables, vegetarian recipes are a great way to make the most of the season’s best flavors.

From roasted vegetables to homemade veggie burgers, here are 25 easy, seasonal vegetarian dinner recipes for fall!
