The day before Thanksgiving I spend most of the day in the kitchen. I like to make many of my dishes ahead, so all I basically have to do the next day is remove casserole dishes from the refrigerator and place them in the oven to bake. It makes my day so much more enjoyable that way. I make ahead my dressing, some stuffed mushrooms, and at least 1 gratin. I started making gratins several years ago when I realized how easy they were to make ahead of time and store in the refrigerator overnight until ready to bake. My personal favorite is a sweet potato gratin with a little spicy kick.
Here I have assembled 25 amazing vegetable gratins, perfect for your Thanksgiving table. All of these gratins can be assembled and placed in a baking dish the day before, refrigerated overnight, and baked the next day.
