3-Ingredient Rainbow Ice Cream Cake in a JarKelsey Banfield
I’ve long admired Brooke’s gorgeous rainbow cake in a jar and have recreated it many times. But, sometimes the whole process of making a cake from scratch can be tedious. This summer I discovered the fun of ice cream bread and have been whipping that up left and right. All it takes is quality ice cream and self-rising flour and you’ve got a delicious baked good on your hand! The other day I decided to recreate Brooke’s rainbow cake using the ice cream bread recipe. I added a little extra sugar to make it more cake-like and I dyed it vivid colors using food paste. The result was this awesome baked cake in a jar that was totally awesome, especially topped with whipped frosting and sprinkles!
Rainbow Ice Cream Cake in a Jar
makes 2 pints or 4 half-pints
2 cups vanilla ice cream
1 1/2 cups self-rising flour
3/4 cup granulated sugar
1. Preheat the oven to 350 degrees F. Place two half-pint jars on a baking sheet and set aside.
2. Combine the ice cream, flour, and sugar in a mixing bowl until well combined. It will form a stiff dough. Divide the dough into five small bowls and dye it each a different color of the rainbow. Then, layer the colored dough in the jars in whatever rainbow pattern you want. Bake the jars for 50 – 60 minutes each, or until the cake is baked through and a cake tester comes out clean. It may take longer to bake depending on your oven. Top with whipped frosting and serve!
