3-Ingredient Summer Recipes

Have you seen the cover story in Real Simple this month? I’m obsessed with it. Twenty-six recipes that require only three ingredients. The cover recipe (spicy beef kebabs with minted watermelon salad, shown here) was perfect — I had it tonight — but the whole story is filled with winners I can’t wait to try with the kids, like goat cheese empanadas (use pie crusts for the shells, fold and stuff with goat cheese, bake at 375°F for 20-25 minutes; dip into salsa), prosciutto-wrapped nectarines (grilled over medium high heat for 4 to 6 minutes then brushed with maple syrup in final minute of grilling), and the most delicious looking creamy pecorino pasta. (Keep in mind, by the way, that they are 3-ingredient recipes, not 3-ingredient meals.) Totally worth picking up on the newsstand this month and filing in the kitchen shelves.
