3 Variations for the Everyday Breakfast SandwichKelsey Banfield
On weekdays I don’t have a lot of time to make elaborate breakfasts. When it comes to the first meal of the day I usually rely on my homemade pancake mix, which I have on hand at all times, oatmeal with fruit or this simple breakfast sandwich. I love this sandwich because it takes less than 5 minutes to prepare, only requires three basic ingredients and is a healthy way to start the day. Here is my method for making an everyday breakfast sandwich, along with a few ideas for some tasty variations:
Ingredients: One slice of country bread (or bread of your choice), 1 egg, 2 slices cheese (swiss or sharp cheddar are my favorite).
Method: Toast the bread until nice and crisp, add the slices of cheese and melt them slightly in a toaster oven or a skillet. Fry an egg in olive oil to desired consistency and place on top of melted cheese. Sprinkle with a touch of salt and freshly cracked pepper. Enjoy.
Pesto Party Breakfast Sandwich: Spread a tablespoon of fresh pesto on top of the toast before melting the cheese and adding the egg.
Ham & Cheese Breakfast Sandwich: Add a slice of prosciutto, thinly sliced ham or two pieces of bacon on top of the toast before melting the cheese and adding the egg.
Tangy Cheese Breakfast Sandwich: Instead of using swiss or cheddar, sometimes I use goat cheese. Spread the goat cheese on top of the toast before adding the egg. Then sprinkle the fried egg with a few pinches of Parmesan.
