4 Ingredient Coconut Frosting

This Coconut Frosting recipe is the best frosting I have found. Not only is it rich, creamy and silky sweet – it is actually free of dairy and totally vegan. This recipe uses the power of virgin coconut oil to achieve its unique dreamy texture and flavor. Get the recipe..

Coconut Buttercream Frosting:

makes about 3 cups frosting

1/3 cup vegan butter, softened
2/3 cup virgin coconut oil, room temperature
3 cups powdered sugar
pinch salt
optional: a few drops vanilla extract

*use unrefined coconut oil for a more prominent coconut flavor

To make: Blend all ingredients with a hand beater until creamy – chill for about five minutes in fridge before frosting cakes or cupcakes.

Notes: Store frosting or frosted goodies in fridge – but allow a good few minutes for the frosting to “warm” to room temperature and become creamy before serving – coconut oil becomes rock hard in the fridge – so this frosting hardens up as well. I usually allow 30 minutes for the frosting to warm naturally – or you can microwave for 10 seconds to soften.
