Shitake Cream & Sweet Potato Gnocchi
This easy dish tastes as good as a gourmet meal from high end farm-to-table eateries. If you can’t find sweet potato gnocchi, pumpkin or regular gnocchi make a delicious swap.
- 9 ounces sweet potato gnocchi, cooked and drained
- 2 tablespoons butter
- 1/2 large shallot, finely diced
- 1 (5 ounce) container shitake mushrooms, sliced
- 1 (8 ounce) container heavy cream
- 8-10 very small sage leaves for garnish
- pinch salt
- fresh ground pepper
In a large skillet, melt butter over medium-high heat until bubbling.
Toss shallot and shitake mushrooms into butter and cook until the mushrooms begin to turn golden brown. Add cream, toss in gnocchi. Garnish with sage, salt, and pepper, if desired.
