5-Minute Microwave Boozy Chocolate Chip Cookie Cake

If you’ve ever bought a bottle of Madagascar Bourbon Vanilla and found it to be utter perfection for all your baking needs, then you’re going to go LOVE this recipe for a giant, Boozy Chocolate Chip Cookie, which you can mix and bake in your microwave in a matter of minutes! Try serving it with a scoop of vanilla ice cream up top, or slice it into pieces and dive into a totally delicious treat in no time at all!

5-Minute Microwave Boozy Chocolate Chip Cookie Cake

  • 2 eggs
  • 2/3 cup brown sugar
  • 3/4 cup flour
  • 3/4 teaspoon baking powder
  • 2 tablespoons bourbon
  • 2 tablespoons rum
  • 2/3 cup chocolate chips

Mix all ingredients together in a large bowl. Spread batter into a microwave-safe 8″ pie plate sprayed with nonstick cooking spray. Place in microwave and cook in 1-minute bursts for 2-4 minutes, or until the cookie is set. Slice into 8 pieces, serve, share & enjoy.
