Let’s face it: moms find ourselves scavenging for lunch. I know I just grabbed a handful of almonds and a nectarine. That’s not going to cut it and I wouldn’t mind feeling like a real grow-up while we are at it. I love meeting up with a friend for lunch and ordering a lovely sandwich or tartine, but that’s rare. I usually find myself busy working at home (coming up with recipes for you all!) while doing all the other household duties — laundry is calling me and I’ve got a bazillion calls to make. It’s time I figured out a better lunch for myself, a treat to make me feel special while I work away in solitude wearing pajamas. I’ve found some super simple recipes that are sure to do the trick. I may even bust out a glass and pour myself some sparkling water! Here’s to brightening our long and hectic days.

Spring Green Bagel-Wich 2 of 6Avocado and hummus with the option for jalapeÃ±o for some added kick and all kinds of goodness atop a pumpernickel bagel. So perfect for a sophisticated and healthy lunch.

Sweet Potato Hummus Apple Tartine 3 of 6Sweet potato hummus, you read that right! Take the hummus, spread it on toast and top with onion and apple slices. Drool.

Cucumber Tartine 4 of 6Fresh and crisp cucumbers make for a delicious sandwich and this recipe is vegan. If you are not vegan just sub the tofu cream cheese for regular whipped. I think I might add some flavored cream cheese, like veggie. Yum!

Mango Tartine 5 of 6Another vegan variety only this one is sweet and juicy, with a bit of savory to balance things out. Feel free to use regular cream cheese instead of vegan.

Avocado Toast 6 of 6This only takes 5 minutes, which is just about all the time I have. I like the addition of greens between the smashed avocado and toast for an earthier flavor.
