7 Ice Cream Sandwiches to Go Gaga Over

As July and National Ice Cream Month come to an end, I thought it’d be fun to showcase one of my favorite ways of eating ice cream: in a sandwich. Something about the two chewy cookies, the cold ice cream and the intense licking of drips as the hot sun melts it before you can get it down just screams summer to me.

Wasn’t it just last week that I was wondering what the kids and I would do all summer? Yet here it is, the beginning of the back-to-school season knocking at the door. Before the hot, steamy summer days leave in exchange for cooler, shorter days and autumn’s reds and oranges, I’m going to pack as many trips to the pool, the beach, the zoo and the park to hold onto summer.
