Seven seconds, you’re asking with dubious eyebrows drawn. Can you really have dinner on the table in seven seconds? Why, yes! Once you draw a boiling bath of broth and milk on your stovetop, all you have to do to create this creamy chowder is dump, dump, dump in three simple ingredients and serve it up to your starving family. Not only is this recipe utterly simple, it’s full of good-for-you ingredients and makes an ideal meal for those hectic afterschool hours, or on an evening when you just need something warm to take away the chilly bite of autumn weather.
Quick & Creamy Potato, Cheese & Broccoli Chowder
32 oz. chicken broth
1 1/2 cup milk
1 cup dried potato flakes
8 oz. sharp cheddar cheese, grated
10 oz. frozen chopped broccoli
Salt & pepper to taste
In a large pot, bring broth and milk to a boil. Add broccoli, potato flakes, and cheese. Stir until thickened. Remove from heat and serve immediately.
