There is something about summer and seafood that go hand-in-hand. We eat fish year-round. But in the summer I focus on making seafood dishes that are light and fresh instead of heavier baked or roasted seafood dishes. Here are a few of my favorite simple seafood dishes for summer. They are all easy to make and are very satisfying. Some of them are even served at room temperature or chilled making them even more perfect to enjoy on a hot summer day.
