Do you ever have those days when you just have zero energy? Like you are completely zapped and the thought of cooking seems overwhelming? I think we all do. Most of those days I still force myself to cook, but I make things that are super simple. It might be something fun like quesadillas or a quick soup, but whatever it is, it takes minimal effort. Here are some of my favorite meals to make that require very little effort but still hit the spot!
