One of the foods I always struggle to get my daughter to try is mushrooms. She is extremely skeptical of their look and umami flavor. However, I find if I can hide them in certain dishes like orzo or risotto she will come around. It is not always enthusiastically, but she will give them a try. One of the keys to getting kids to eat mushrooms, I think, is to make them into a dish they usually love. As I mentioned, pasta and orzo, a creamy soup for dunking sandwiches, or soft risotto all fit the bill.
