7 Ways to Add Veggies To Your Mac and Cheese

By Angie McGowan |

I never thought I would be one of those mothers that hid veggies in food. Even when my son was a baby he ate so well. I never thought he would be a picky eater. I always thought picky eater kids were a result of picky eater parents.  But when my son turned 4, he started to get picky, real picky. I don’t know what really lead to this event. Maybe it was some picky eater kids at preschool, maybe it’s just a phase he’ll soon grow out of. But whatever it is, the fact is he doesn’t want to eat his veggies right now, unless they’re in some sort of pasta or rice dish. So I am resorting to drastic measures, like hiding pureed butternut squash in mac and cheese as shown above.

If your kid is picky like mine, or you just want to enjoy some fabulous macaroni and cheese for your family that that is actually nutritious, you’ll love these veggie filled macaroni and cheese recipes below.
